Coonawarra received good winter rains leading into the growing season, which has highlighted the importance of the quality and quantity of underground water used to mitigate temperature and seasonal weather conditions. There was no significant crop loss due to heat, and canopies remained in excellent condition through to the end of harvest; significantly benefiting from the typically cool nights created by the Southern Ocean. After picking, parcels were fermented in rotary vinomatic fermenters for 8-10 days between 24°C and 30°C on premium French untoasted & toasted oak chips. The wine was then pressed at 0.5 baume through a bag press into stainless steel storage tanks and left to ferment until dry. After Malolactic fermentation, each parcel was clarified via centrifuge into stainless steel storage, then put into new and old French & American oak barrels. After 12 months we selected the best barrels and blended them, ready for bottling.

This wine has been made to drink now but will cellar for 5 to 10 years.

"I don't drink enough of Coonawarra Cabernet Sauvignon. It does seem too fashionable these days but it's bloody great gear. This lovely Cabernet has a few years in the bottle and a year of American and French oak. Seems more on the French oak side for mine. It a reasonably full Cabernet with loads of dusty fruit with a mix of herb, olive paste and gas that great Aussie hit of mint or eucalyptus. Ready to drink now and for another decade. As with all Berton wines they punch above their weight and at only $22 bucks is a steal."
