Winemaking
Our High Eden vineyard experienced a testing climatic season, with warm and dry conditions persisting through the growing months, along with a hail and high winds event in November, resulting in a very low yielding vintage. Quality, despite the tough conditions, surprised, showing how resilient these Chardonnay vines are under stress. Ripening occurred quite early, and harvest was on the 15th of March in the cool of the night, preserving the freshness and characters produced in the vineyard, and protecting the fruit while it is pressed and filtered before fermentation. After harvest the fruit is crushed and destemmed, then transferred to the press for a gentle press cycle and clarification. The juice is then transported to Yenda for fermentation at 14-16 degrees for approximately two weeks, then transferred to new French oak puncheons, stirring the lees every 1-2 weeks for the first three months and then monthly for the remainder. After six months the best barrels are selected for this single vineyard wine.
Peak drinking
Additional bottle maturation prior to being released has allowed this wine to blossom, making the wine ready for immediate drinking but with the ability to age well over the next 5 years.

"Full buttercup-yellow colour, quite developed for its age. The bouquet is likewise very forward, with a marc-like oiliness and a note of lime marmalade and possibly fig jam. A big-boned, rather obvious wine without refinement, a bit coarse, but certainly has plenty of flavour and weight."
