Set in High Eden, a region of rugged beauty between Eden Valley and the Barossa, our Cabernet Sauvignon is grown on ancient podsolic soils that offer lots of quartz rock and little other sustenance.

Winemaking

Drought conditions prevailed leading up to the 2018 harvest in our High Eden Vineyard – the dam was almost dry, with no rain predicted. Hot days and warmer than average nights through January and February saw the fruit ripen earlier, and the Cabernet Sauvignon was harvested on the 18th of April. The Cabernet Sauvignon was destemmed and crushed into 15 tonne static fermenters where it was inoculated and fermented for six days between 26 and 28 degrees. At 0.5 Baume the wine was pressed and left to complete malolactic fermentation. Once this was complete the wine was filtered and transferred to new and old French and American oak barrels.

Deep red in colour, the signature tomato leaf aromas are present, along with blackcurrant and tobacco.

Ripe blackcurrant and blueberry complement hints of sweet vanilla and coffee. Fine, velvety tannins tail off into a long, savoury finish.
