Drought conditions prevailed leading up to the 2018 harvest in our High Eden Vineyard – the dam was almost dry, with no rain predicted. Hot days and warmer than average nights through January and February saw the fruit ripen earlier, and the Cabernet Sauvignon was harvested on the 18th of April. The Cabernet Sauvignon was destemmed and crushed into 15 tonne static fermenters where it was inoculated and fermented for six days between 26 and 28 degrees. At 0.5 Baume the wine was pressed and left to complete malolactic fermentation. Once this was complete the wine was filtered and transferred to new and old French and American oak barrels.

This wine has been made to drink now but will cellar for 5 - 10 years.

"Intense ruby colour with some brick tinges to the rim. Black fruit, cigar box and tobacco aromatics. Big forward fruit, some cedary oak notes that slightly dominate."
